  • Almond Flour: 1 cup (110g) – finely ground almond flour works best for a smooth texture.

  • Baking Soda: ¼ teaspoon

  • Sea Salt: ¼ teaspoon

  • Unsalted Butter: ¼ cup (57g) – make sure it is softened to room temperature.

  • Brown Sugar: ¼ cup (50g) – you can use either dark or light brown sugar.

  • Vanilla Extract: 1 teaspoon

  • Semi-Sweet Chocolate Chips: ½ cup (80g) – plus a few extra to press on top of the dough later.

Step-by-Step Instructions

Step 1: Prep the Oven and Dry Ingredients First, preheat your oven to 350°F (180°C). Line a baking sheet with a piece of parchment paper or a silicone baking mat. In a medium glass mixing bowl, combine the almond flour, baking soda, and sea salt. Whisk everything together until there are no clumps, then set the bowl aside.

Step 2: Cream the Butter and Sugar In a separate large bowl or a stand mixer, add the softened unsalted butter and the brown sugar. Beat them together on medium to high speed until the mixture becomes light and fluffy. Take a moment to scrape down the sides and bottom of the bowl with a silicone spatula so everything mixes evenly.

Step 3: Combine and Add the Chocolate Pour your dry almond flour mixture into the fluffy butter and sugar. Add the vanilla extract. Mix on a low speed just until the dough comes together. Finally, pour in the semi-sweet chocolate chips and gently fold them in until they are distributed throughout the dough.

Step 4: Scoop and Shape Grab a medium ice cream scoop (about 1½ tablespoons) and portion the dough into even balls. Place them on your prepared baking sheet, leaving enough space between them.

Baking Tip: Gently press down on each dough ball to flatten it slightly. Almond flour cookies do not spread in the oven as much as regular flour cookies, so they need a little help shaping up! Press a few extra chocolate chips onto the tops for that perfect bakery look.

Step 5: Bake and Cool Bake in the preheated oven for 12 to 14 minutes. You will know they are done when the edges feel lightly firm but the centers still look a bit soft. Take them out and let them cool directly on the baking sheet for at least 5 minutes. They will continue to firm up as they cool down.
