The Ultimate One-Pot Lemon Garlic Chicken and Rice

By Chef: 250823 Monirojjaman July 31, 2026

We all love a home-cooked meal, but nobody loves doing a mountain of dishes afterward. If you are looking for a weeknight dinner that is easy to prepare, easy to clean up, and absolutely bursting with bright, savory flavors, this One-Pot Lemon Garlic Chicken and Rice is about to become your new favorite recipe.

By cooking everything in a single pan, the long-grain rice soaks up all the rich chicken drippings, zesty lemon, and aromatic garlic, resulting in a deeply flavorful and comforting dish. Best of all? The oven does most of the heavy lifting.

Why This Recipe Works

The secret to this dish is layering. First, we build a bright, acidic profile by marinating the chicken in fresh lemon juice and zest. Second, by searing the chicken before baking, we lock in a crispy skin and leave behind flavorful fats in the pan. Finally, roasting whole heads of garlic in the broth turns them sweet and creamy, acting as a natural, buttery sauce that gets stirred into the rice at the very end.

Ingredients You Will Need

For the Chicken & Marinade:

  • Chicken: 1/2 Chicken (Legs and thighs, bone-in and skin-on for maximum flavor).

  • Lemon: 1 whole lemon (You will use both the zest and the juice).

  • Olive Oil: 1 Tablespoon.

  • Aromatics: 1/2 tsp garlic paste and 1 tsp ginger paste.

  • Seasoning: 1 tsp dried oregano, 1 tsp salt, and 1 tsp black pepper.

For the Rice Base:

  • Oil: 1 Tablespoon.

  • Onion: 1/2 cup, thinly sliced.

  • Garlic: 1 clove, chopped (plus 1-2 whole garlic bulbs with the tops cut off).

  • Rice: 1 Cup of long-grain rice (like Basmati or Jasmine).

  • Liquid: 2 Cups of hot water.

  • Extras: The leftover chicken marinade and the squeezed lemon halves from earlier.

Step-by-Step Instructions

1. Marinate the Chicken Place your bone-in, skin-on chicken pieces into a bowl. Zest your entire lemon over the chicken, then cut it in half and squeeze in the juice (save those squeezed lemon halves!). Add the olive oil, garlic paste, ginger paste, oregano, salt, and pepper. Toss well to coat. Cover and let it marinate in the fridge for at least 2 hours (or overnight for the best flavor).

2. Sear for Crispy Skin Heat 1 tablespoon of oil in a large, oven-safe pot over medium heat. Remove the chicken from the bowl (do not throw away the leftover marinade!) and place it skin-side down in the hot pot. Fry for 4-5 minutes per side until the skin is beautifully charred and golden brown. Remove the chicken and set it aside on a plate.

3. Toast the Aromatics and Rice In the same pot—using the flavorful chicken fats left behind—add your sliced onions and sauté for one minute. Toss in the chopped garlic clove and fry until golden. Next, pour in your uncooked long-grain rice. Stir-fry the dry rice for 2-3 minutes. Toasting the rice this way prevents it from getting mushy later.

4. Build the Broth Pour 2 cups of hot water into the pot. Now, pour in that leftover lemon-herb marinade you saved! Add a little extra salt and pepper to taste, and stir everything to combine.

5. Nestle and Bake Gently place your seared chicken pieces back into the pot, resting them right on top of the rice and liquid. Nestle your whole garlic bulbs (tops cut off) and the leftover squeezed lemon halves in between the chicken pieces.

Transfer the uncovered pot to a preheated oven at 375°F (190°C) and bake for 30 to 45 minutes. The liquid will absorb, the rice will become fluffy, and the chicken skin will crisp up perfectly.

6. The Magic Garlic Finish Once you remove the pot from the oven, take out the whole garlic bulbs and the lemon halves. Carefully squeeze the bottom of the roasted garlic bulbs—the cloves will pop out like a soft, sweet, savory paste. Mix those roasted garlic cloves directly into the hot rice.

Serve immediately while hot, and enjoy the perfect balance of zesty lemon, savory chicken, and creamy roasted garlic!
