Nobody wants to spend their entire Sunday afternoon in the kitchen chopping, flipping, and cleaning just to eat plain chicken breasts and a sad cup of broccoli.

But what if I told you that you could make a week's worth of healthy, budget-friendly, and actually delicious meals in just one single hour?

In his video "Cheap And Healthy Meals For The Week, Done In 1 Hour," chef Joshua Weissman teams up with fitness expert Noor to prove that meal prep doesn't have to be miserable. Here’s the breakdown of how to get shredded without sacrificing flavor—or your entire weekend.

The Secret Weapon: The Sous-Vide

The biggest problem with healthy eating is usually moisture. Fatty cuts of meat are delicious because they're juicy, while lean chicken breast often ends up drier than the Mojave Desert. The second problem is the sheer amount of time it takes to stand over a stove cooking huge batches of protein.



Weissman's solution? A sous-vide circulator.

By sealing your seasoned chicken breasts or pork tenderloins in a vacuum bag and dropping them into a 150°F (65°C) water bath for 50-55 minutes, you achieve two things:

  1. Your protein comes out incredibly juicy and perfectly cooked every single time.

  2. You completely free up your hands (and your stove) to prep everything else while the meat cooks.

The 1-Hour Workflow

To make this work in an hour, you have to multi-task like a pro. Once your protein is in the sous-vide, it's time to start the clock and tackle the other longest process: the rice.

Forget brown rice. Weissman firmly advocates for medium-grain white rice (just wash it well to remove excess starch) cooked in a rice cooker. It takes about 35 minutes, giving you a perfect window to prep your veggies and sauces.

With the meat bathing and the rice steaming, you can tackle the actual meals.

The Menu: 3 Flavor-Packed Options

1. The Green Goddess Chicken Salad

Forget sad, wilted salads. This one is all about the dressing. In a blender, combine toasted almonds, nutritional yeast, garlic cloves, fresh basil, baby spinach, and optionally, a charred poblano pepper. Blend it up, stream in some olive oil, and season with salt, pepper, and lemon juice.

Toss some chopped iceberg lettuce and cherry tomatoes in the dressing, portion it into your prep containers, and top it with your juicy sous-vide chicken when it's done.

2. The Pork Fajita Bowl

This bowl is hearty, fresh, and surprisingly easy. Thinly slice bell peppers and a sweet onion, then sauté them over medium-high heat until they are lightly charred with a bit of a crunch left.

For a punch of flavor, whip up a quick sauce using chopped parsley, grated garlic, water, soy sauce, olive oil, and lemon juice. Once your sous-vide pork is done, slice it up and build your bowl with the pork, peppers and onions, a scoop of white rice, and a heavy drizzle of that garlic-herb sauce.

3. The Jammy Egg & Turkey Sausage Breakfast Sandwich

Need a high-protein start to your morning? This breakfast sandwich packs about 30 grams of protein.

Boil your eggs for exactly 6 minutes and 30 seconds for a perfect "jammy" yolk, then cool them in an ice bath. For the sausage, mix 95% lean ground turkey with finely chopped sage, onion powder, garlic powder, sea salt, cayenne, and black pepper. Form them into thin patties and sear them up like a smash burger.

Load up some toasted bread with your turkey patty and that glorious jammy egg (split perfectly down the middle). Serve it on the side with a mix of raspberries, blackberries, and Greek yogurt topped with cinnamon.
